Very Berry Cake

I am a year older, a year wiser ,little more patient and I am enjoying every bit of life more than what I did last year.Yes it’s my birthday today.I still feel excited about my birthday and surprises and all the love , flowers and gifts. The boys made sure they do a hand made card for me every year and I have most of them stacked in my memory box .Mr LCF got me beautiful flowers to start the day with along with a book on bread baking by Emmanuel hadjiandreou. Wow I am already bowled over by so much of love.
We went for a family run in the morning and then for a hearty organic breakfast at @farmerscafe ,enjoyed some tartines with avocados bananas muesli ohh they tasted divine.We spent a lazy afternoon at home playing guitar , watching movie and of course we baked a beautiful cake.
I wanted to do an apple cinnamon cake but when I saw some fresh berries in the fridge I planned to bake rhis delicious eggless very berry cake very popular and hit in the family.
Ya that’s me with all the flowers candles and the cake and with the vision for a better next year.
Ingredients and recipe for the Very Berry Cake
1 cup all purpose flour
1/2 cup whole wheat flour
1/4 cup almond meal
1 tsp baking powder
1 cup of powdered sugar
1/2 tsp baking soda
1/4 tsp salt
mix everything well and sieve 2-3 times and keep this dry mix aside.
Mix 1 tbsp of white vinegar with one cup of milk of choice
and keep it aside.
Add 1/3 cup canola oil
Scrape one vanilla bean in the mix
Add zest of one orange
mix the wet ingredients well
add the dry ingredients to the wet in three batches with the spatula .
once everything comes together add 1 1/2 full cup of chopped strawberries, whole raspberries and blueberries sprinkled with tbsp of flour.
dont overmix.bake in a 8 inch bundt pan greased and dusted .Bake in a preheated oven for 35 min at 180c .Cool on the wire rack
Drizzle the mixture of two tbsp mascarpone cheese, 2 tbsp powdered sugar and 3-4 tbsp of orange juice. Cool in the fridge and decorate with some more berries of your choice.
