This cake has been baked several times in my house, gone  to several friends house as gifts innumerable times and still made it to the blog so late but nevertheless now I have a wonderful, summery easy peasy ,eggless cake recipe for you all.This cake has few of my favourite ingredients oranges and almonds and coconut sugar which makes it a little healthier than those sugarcoated , icing laden cakes . It’s not only eggless but vegan too ,great on flavours yet very simple to make.

I had a bag full of clementines few days back which happened to be Father’s Day and I had no time in hand . During such hasty times I know I can only trust a tried and tested recipe so I pulled out my new peach baking pan that my SIL bought for me from @marshalls on our last visit to USA and whipped this beauty .

The recipe ingredients are

DRY MIX

1 cup all purpose flour

1/2 cup almond flour

1 tsp baking soda

1/4 tsp salt

WET MIX

1/2 cup freshly squeezed orange juice

1/3 cup non fragrant oil like canola

1 tsp orange zest

1 tsp orange essence or extract

1 1/4 cup coconut sugar ( if using powdered sugar use 1 cup ) 

1 tbsp vinegar

FOR EGG REPLCER

grind 1 tbsp chia seeds and add 3 tbsp water

keep aside .

STEP BY STEP PROCESS

ADD1 cup APF AND 1/2 CUP ALMOND FLOUR
ADD 1 tsp BAKING SODA
ADD 1/4 tsp salt
GRIND 1 TBSP CHIA SEEDS
MIX WITH 3 tbsp water
ADD 1 tbsp ORANGE ZEST
ADD 1/2 CUP ORANGE JUICE
ADD 1 1/4 CUP cOCONUT SUGAR
ADD CHIA SEED MIX
MIX DRY INGREADIENTS TO WET MIX
ADD 1 tsp ORANCE ESSENCE
DECORATE WITH ALMONDS
BAKE AT 175 c for 30 min in a greased 8 inch pan

Cool the cake completely before taking it out .Decorate with fruits or cream cheese frosting if you want it little more indulgent.
