TROPICAL QUINOA AND BANANA CAKE

 

When my peers are chilling out on a off day I am always brainstorming, trying out new recipes ,reading posts from my fav bloggers and  cooking till I am exhausted .but that’s the way I like to spend my day off. I started with galette in the morning and ended up making this moist nutty healthy quinoa and banana cake for breakfast and avacado and beet rose on toast and crunchy rainbow salad  for lunch.

And now while the pastry dough is still lying cling wrapped in the fridge I have landed in Abu Dhabi and I am writing this post on route to my hotel.. u see time management. Lot of moms ask me with this stressful job of flying and staying away from home how do you manage kids , home and on top this interest in cooking and blogging?
My answer to them is I love my kids, my work and my hobby all of them . The three magical  words are prioritise, Organize and seek help.
We’re expected to do our jobs as if we don’t have children — and then raise our children as if we don’t have jobs .I must confess it wasn’t that bad initially but as the family started growing and work became more demanding I began to have panic attacks and filled myself with guilt of not giving my best at work and home .
But then I seeked help from my parents ,hired some good helps at home,put my kids in reliable daycare and organised and planned our schedules and made sure to stick by it and so now we all are happy and I get enough time to peruse my hobby.
Now back to our quinoa cake. I planned to make a breakfast bread and realised the loaf pan was big so poured into a cake pan .it came out nutty ,flavourful and very soft .we topped it with our favourite breakfast ingredients yogurt, berries , honey and nuts . The sugar is perfect for bread but less for cake but toppings make up for sugar.so here we go with the recipe

 

 

 

Cooking time : 50 min Prep time: 20 min

Dry items

1 cup quinoa flour
1 tbsp almond meal
2 tbsp dry coconut shredded

1 tsp baking soda

1/4 tsp cinnamon powder

1/4 tsp salt

Wet items
1 tsp flax seed + 3 tsp water mixed and set aside
1/4 cup yogurt
1/4 cup coconut milk
3 tbsp coconut oil
1 tbsp apple cider
150gms condense milk

1 tsp vanilla extract

 

 

 

 

 

 

 

 

 

 

Preparation

Mix flour , baking soda and almond meal and coconut shreds well.
Mix condense milk, coconut oil , coconut milk , yogurt and apple cider with flax meal well with a whisk.
Add the dry ingredients to wet in batches till well incorporated.
Pour in a 7 inch greased and dusted pan.
Bake in a preheated oven for 30 min at 180c
Hang 250 gms thick yogurt overnight in a muslin cloth .add 1/4 to 1/2 cup sugar or 2 tbsp honey mix well.
Place choice of fruits, berries nuts, honey, some jam ,peanut butter and hung yogurt on the table. Let the kids Play with their immagination , perfect for a weekend indulgent leisure breakfast.
