Strawberry lemon cake

Summers are approaching and I am craving for some fresh , tangy ,tart ,sweet dessert . This cake is to welcome spring and to say goodbye to my favourite strawberries.The tartness of lemons is mellowed down by sweetness of strawberries,almonds give it a nice crumble while zest of lemon add that oomph factor.

I bought these sweet little strawberries from the nearby weekend organic market .They were not the reddest but juiciest strawberries ever .I love these natural candies so much that I can eat a box for the breakfast.This eggless strawberry lemon cake turned out stunning for a summer picnic or tea time snack.I kept it naked to let the sweet little jewels shine on top didn’t want the frosting to take the credit.

The cake is light and fresh and can be paired with some softened cream cheese and vanilla ice cream .

 

 

 

 

 

 

 

 

So here goes the recipe of this simple eggless strawberry lemon cake

STRAWBERRY LEMON CAKE

DRY ITEMS

1 cup All purpose flour
1/2 cup almond meal
1/2cup powdered sugar
1 tsp baking powder
1/2 tsp soda
Salt 1/4 tsp
Mix and sieve all

WET ITEMS

1 ripe banana
1 tsp vanilla powder
1/3 cup oil
1/3 cup curd
3 tbsp lemon juice
rind of two lemons.

sieve the dry ingredients together twice and keep aside.mix the wet ingredients with the hand blender.Mix dry ingredients to wet in three batches.decorate with strawberry slices on top.sprinBake for 40 min at 175 c
