Saffron spiced narangi cake

This beautiful cake is very simple to make , yet it is very aromatic with saffron and the zest and juice of desi oranges Narangi . I had a small box of saffron that I brought from the souk (spice market) in Dubai that was totally forgotten till I decided to pair with some Narangi ‘s in hand.
Narangi is from citrous family with a thinner skin unlike oranges and a wonderful sweet and tangy taste .It paired delightfully with saffron in this humble cake . It’s an eggless cake moistened with yogurt and butter. Let get to the recipe now .
Ingredients
Saffron drip
1 cup orange juice
2 tbsp sugar
few saffron strands
Boil till it reduces to half and gets syrup like consistency.
Dry ingredients
1/2 cup whole wheat flour
1/2 cup APF
3/4 tsp baking powder
1/2 tsp baking soda
pinch salt
sieve everything together twice and keep aside .
Wet ingredients
1/2 cup raw sugar powdered
1/3 cup narangi juice
1/4 cup oil ( non fragrant)
1 cup yogurt
Beat everything well with a hand blender .
Add 1/2 tsp vanilla extract
add 1 tsp narangi zest
Mix the dry ingredients to wet in small batches .Add more orange juice if required to get the desired cake batter consistency
Bake at 175 c for 35-40 min till toothpick comes out clean .
Cool the cake on the rack for10 min hen drizzle with saffron drip while it’s warm .
slice when completely cooled .
