Lemon chia berries loaf
Its been been a while the blog is updated and the hungry blog deserves this show stopper LEMON CHIA BERRY LOAF recipe. Does anyone of you crave for cakes like me? I do , sometimes at the middle of night and believe me these cravings always brings the best out of me. I am a sucker for berries and love to pair them with flour in cakes , galette and breads .Thia loaf has few of my favourite flavours from blueberries, raspberries,lime and coconut.My current obsession of trying to bake with healthier ingredients pushes me to experiment more often in the kitchen.The whole emphasis is on using healthier substitutes and yet make delicious guilt free desserts for the family.If you are planning a make ahead dessert for a party this loaf is divine, indulgent , bursting with flavours and very satisfying.Decorated with some edible flowers and loads of berries , served with vanilla ice cream the loaf is surely a show stopper.
For the ingredients you will need
1 cup all purpose flour sifted
1/2 cup almond meal
1 /2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
2 tbsp chia seeds
mix everthing well keep aside.
1 medium ripe banana mashed
1/2 cup coconut sugar take 3/4 cup if u like more sweet
1/3 cup coconut oil
1/2 cup thick coconut yogurt( any regular yogurt if not vegan)
1 tsp vanilla extract
mix well using hand blender or whisk.
Add dry ingredients to wet slowly while mixing . Add around 1/4 cup water or less to get the cake batter consistency.Add flour coated blueberries and raspberries around a cup full. Mix wit light hands .Bake in a preheated oven for 30 -35 min min at 180 c or until toothpick comes out clean.
