December is a feel good month, a month full of celebrations meeting friends , Having fun , lots of cooking and baking.. my baking pans are out too..

I came back yesterday from my three days trip to Abu Dhabi, real tiring whole night flight and little A asked me in the morning can I eat cake for breakfast. Kids at 4 yrs think their mom and dads have magical wands . I wanted to give him something healthy and didn’t want to deny his wish ; after all I met him in three long days. I peeped into the fridge and saw a bowl full of cream ( top of milk aka malai) and knew what’s coming out of the oven.

I used whole wheat flour , almonds raisins, pistachios and coconut to make this delicious morning treat for my darling A . He finally took a piece and nibbled while on his way to school.

Recipe for Nuts and Cream cake

1/2 cup whole wheat flour

1/4 cup all purpose flour

1/2 cup almond meal

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

mix everything well and seize twice to make the flour light

add 1/2 cup raisins and keep aside.

mix 1/2 cup cream with 3/4 cup brown sugar( can reduce to 1/2 cup)and mix with hand blender till creamy. Add a tsp of cardamom powder.

now mix the dry ingredients to wet in three batches.Add one or two tsp of milk to get it to cake consistency.

now cover the top with sliced almonds, pistachios and roasted coconut and bake in a preheated oven for 30 min at 180 c or until toothpick comes out clean.
