Strawberry Galette

Strawberry Galette

Galette are impressive, easy and fantastic Spring desserts that can be baked in a jiffy .Even the non bakers would love it as all it requires is to fold some fruits in a rustic pie that needs absolutely no finesse; the more rustic it is more appealing it will be.

it can be made with almost all stone fruits and berries but the strawberries really shine in galettes,The little sweet and tart juicy strawberries with the flaky buttery pastry is a great dessert  to entertain guests .The dough can be made in advance in few minutes in a food processor and can be clingwrapped and stored in the fridge .Thirty minutes before you want to serve it just roll the pie throw in some sugar coated berries and push it in the oven .This  beautiful dessert will come out so effortlessly that it will be a delight to u and your your loved ones.

Pits a simple recipe and a must try .All you have to remember is to keep everything cold ,

INGREDIENTS

FOR PIE

1 1/2 cup all purpose flour

1/2 cup cold butter( I have tried with Cold coconut oil too) results differ but it tastes good and healthy too

1 tsp vanilla powder

1/4 cup coconut sugar or brown sugar

FOR FILLING

Strawberries and blueberries

lemon juice

coconut sugar

1/4 cup almond meal

Almond butter 1 tbsp optional

milk or apricot jam for brushing

For pastry base

Mix everything in a food processor and run so the butter gets incorporated in the flour and it should become sand like consistency.you can even do it by hand.

bring the flour together to make a dough.You can add a tbsp of cold water if needed.

Cover with cling film and refrigerate.

1 cup chopped strawberries

1 cup blueberries

1 tbsp coconut sugar

juice of half a lime .Mix and refrigerate

When you are ready to assemble, roll the dough in a relatively thick circle

sprikle some almond meal over the pie.I also drizzled   some almond butter for extra indulgence .

Place the berry mix in the centre leaving around 1-1 1/2 inch border.Sprinkle some cardamom powder if you like.

cover the sides in a rustic manner so that the berries look nestled in the pie.

Brush the pie with some milk I like to brush pies with thinned apricot jam. Now bake in a preheated oven for 30-35 min at 180c .

Once cooled sprinkle with almond flakes , slice and serve .

It’s a very versatile dessert and you can use plums,peaches,berries and even tomatoes to make galette
